Pickthall translates as God constraining night and day and the sun and moon being of service to man. Shakir includes the sun and moon within the subservience. These were supposed to be signs to man. But man is not in control of either the day nor the night.
Here, the phrase sounds poetic, but Muslims have affirmed a literal interpretation of the preceding phrase (in the same verse) where God created the heavens and earth in 6 days. If this phrase is literal, then it contradicts science since night is due to the absence of light from the sun, not a veil covering the sun or the earth.
